re-discovering filipino coffee and café culture

Our Mum told us stories of how our Lolo Ruperto would sit outside every morning with a strong cup of barako coffee and warm pandesal. Freshly brewed in a cast iron pot, you could smell the coffee from the other side of the road. He would drink it just black with dark muscovado sugar, dunking his pandesal as he pleased. Proudly reading an American newspaper, greeting neighbours as they passed by.

We fondly remember this story, it was our first connection with coffee, especially coffee from the Philippines. We didnt grow up drinking barako, or eating pandesal. We were brought up with traditional european staples. It is as we got older, that our curiosity and reliving this story became something special to us, something we wanted to tell to others as we went on our own journey of discovery.

As we learnt from some of the best in the London coffee industry, visiting oustanding artisinal producers around the Philippines alongside learning the craft of baking from scratch. Tucked in a little corner of London serving the fine flavours of the 7,000 Islands.
