Producer Spotlight - Malagos Chocolate

Malagos Chocolate.

Malagos Chocolate is grown from seedling, to trees full of pods, to delicious chocolate, all on the same farm. Davao, in the Southern island of Mindanao is known as the fruit basket of the Philippines. Home to many flourishing cacao farms including Malagos. Many of which have had the guidance and knowledge of the founders of Malagos Farms. The Puentespina Family.

The chocolate produced by Malagos farms has a distinctive tropical sweet fruit note. It really is hard to describe. I would liken it most to a sweet rich tropical rum caramel. Visiting the Malagos farm in 2018 was one of the best experiences for us. Being shown the process and care going into each stage from caring for the pods whilst on the tree to drying the cacao seeds in raised houses gave us more insight and understanding to better explain to guests of Kapihan why their chocolate tastes the way it does. The Puentespina family are dedicated to progressive and sustainable farming and have always been inspirational to work with and humbling to meet.

Malagos competes annually in a myriad of international ceremonies for the quality of their chocolate and regularly placed in the top 3.

Malagos is used throughout Kapihan, either in the Panaderia in our Espresso Malagos Brownies, Chocolate Leche Flan Chiffon Cake or in the drinks menu as a intensely rich hot chocolate or traditional Sikwate.
